Gluten Free Batter for Fish

  • 2 egg whites
  • ½ cup cornstarch
  • ½ tsp paprika
  • ¼ cup sweet rice flour
  • ½ tsp salt

Bet egg whites til stiff.  Sift in cornstarch, paprika and salt

(Use Cod or halibut as they hold to-gether better)
Rinse fish fillets under cold water.  Dredge in the rice flour then dip into egg white mixture.  Pan fry 2 – 4 minutes until the coating is crisp
