Jam Squares

Bottom Crust:
½ cup butter
1 cup gluten free flour mix
1 tsp. Baking powder
1 egg slightly beaten

One jar of your favourite jam

Mix ingredients to-gether, and pat into 8 x 8 pan that has been lined with parchment paper. Spread with a thin layer of jam and bake at 350 for 10 minutes

Topping:
2 eggs
¾ cup sugar
2 & ½ cups coconut
1 Tbsp melted butter
½ tsp vanilla
Beat ingredients to-gether and spread over base.  Bake at 350 until golden brown and toothpick inserted in top comes out clean
