Joni's Reverse Chocolate Chip Cookies

These cookies are the reverse of regular looking chocolate chip cookies hence the name!!!

  • 1 cup tapioca starch ( you can use rice flour but the texture will be grainy I don’t recommend it)
  • ½ cup gf cocoa powder
  • 1 tsp xantham gum
  • ½ tsp baking soda
  • ¼ tsp. salt
  • ¼ tsp baking powder
  • ½ cup softened butter
  • ½ cup brown sugar
  • ½ cup sugar
  • 1 egg
  • 2 tsp vanilla
  • 1 cup white chocolate chips


  1. In a medium bowl combine all dry ingredients

  2. In a large bowl combine softened butter and both sugars and with electric mixture on high for 2 minutes until creamy and fluffy.
  3. Add vanilla and egg to butter mixture and blend for another minute

  4. Add dry ingredients and mix with a spoon until slightly blended then use electric mixture until completely combined.

  5. Mix in white chocolate chips with spoon.

  6. Line 2 cookie sheets with parchment paper. Drop tablespoons of cookie dough 2 inches apart and flatten slightly.

  7. Bake in 350 degree oven until top is cracked approximately 10-12 minutes

  8. Let cool before trying to remove from cookie sheet.

  9. Enjoy!!!!!!!
